BASIC BANANA MUFFINS

dense-textured muffins. banana chips add a special touch for brunch.

Ingredients

  • 2 cups all purpose flour
  • 3/4 cup brown sugar, packed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1 1/2 cups mashed overripe banana (about 3 medium)
  • 1/2 cup milk
  • 1/3 cup butter, melted
  • 1 tsp vanilla
  • 12 banana chips

Preparation

Step 1

Measure first 5 ingredients into large bowl. Stir. Make a well in centre.

Combine next 5 ingredients in medium bowl. Add to well. Stir until just moistened. Fill 12 greased muffin cups 3/4 full.

Press banana chips on top of batter. Bake in 375 oven for 20 to 22 minutes until wooden pick inserted in centre of muffin comes out clean.
