Baked Spicy Garlic Potato

Ingredients

  • 4 cloves garlic, peeled and minced
  • 1/4 cup extra virgin olive oil
  • 2 lbs Yokon gold potatoes, scrubbed and cut into thick wedges
  • 2 tsp smoky paprika chipotle seasoning (or any spicy seasoning of your
  • choice.
  • 1 tsp salt

Preparation

Step 1

Place minced garlic and olive oil in small microwaveable bowl. Cook on high for 45 seconds. Remove and set aside.

Place potato wedges in a large bowl. Sprinkle seasoning and salt over wedges. Bake at 425degrees for 40 to 45 min or until golden brown. Turn wedges every 10 min or so to get evenly browned.

Remove and serve immediately

** strain the oil to remove garlic if you prefer not to have it with the potatoes.
