- 4 CUPS CUBED COOKE POTATOES
- 1/2 CUP CHOPPED GREEN PEPPERS
- 2 TBSP CHOPPED ONION
- 1/2 CUP BUTTER
- SALT AND PEPPER
- 4 EGGS
- 1 CUP SHREDDED CHEDDAR CHEESE
Preparation
Step 1
COOK AND STIR POTATOES, GREEN PEPPERS, ONION IN BUTTER IN SKILLET ON MEDIUM HIGH HEAT UNTIL LIGHTLY BROWN.
SEASON TO TASTE WITH SALT AND PEPPER.
BREAK EGGS OVER POTATO MIXTURE, COVER AND COOK UNTIL EGGS ARE SET.
SPRINKLE WITH CHEESE
COVER AND COOK UNTIL CHEESE IS MELTED
