Ingredients

  • 1 3-5 lb turkey breast
  • 1-2 Tbsp poultry seasoning
  • 1/2 tsp rubbed sage (optional)
  • 1-2 Tbsp melted butter or olive oil, or cooking spray
  • 2 cups hot water
  • 2 tsp turkey soup base

Preparation

Step 1

Preheat oven to 350 deg. Clean the turkey breast, pat dry and place in a roasting pan. In a medium bowl, combine the poultry seasoning and sage (if using), and mix well. Rub the turkey with the melted butter or oil, or spray with cooking spray. Gently pull the skin away from the turkey and rub the meat with about 1/3 of the spice mix. Rub another 1/3 of the mix over the skin. Pour the hot water in the bowl with the remaining spice mix. Add the turkey soup base and stir until dissolved. Pour about half the stock into the bottom of the turkey roasting pan. Roast the turkey at 350 deg until done, usually 60-90 min depending on the size. Use a meat thermometer to check but remember the temperature will rise 5 deg once out of the oven. While the turkey is roasting, occasionally ad the turkey broth to the pan in small amounts to add moisture. The pan drippings will make a wonderful base for gravy.
