Crispy Fried Tomatoes

Ingredients

  • 2 tomatoes
  • 2 eggs
  • 2 cups coconut flour
  • coconut oil
  • salt and pepper, to taste

Heat coconut oil in a skillet over medium heat. Slice the tomatoes (thickness is up to you). In a small bowl, beat the eggs. Dip the tomato slices in the egg mixture, then coat with coconut flour. Fry the tomatoes in coconut oil until they are golden brown. Season with salt and pepper, to taste.

1. After dipping the tomatoes in the egg mixture and then coating with coconut flour, repeat the process. This will make an thicker, crunchier outer layer.
