Ingredients
- 4 1/2 cups baby spinach leaves
- 6 slices Roma tomato
- 1/4 cup crumbled Blue cheese
- 2 tbsp golden raisins
- 2 tbsp candied pecans
- 1/4 cup sliced roasted red pepper
- Balsamic Vinaigrette
Preparation
Step 1
Mound equal amounts of the spinach on two salad plates. Arrange the tomato slices around the spinach. Sprinkle with Blue cheese, raisins and pecans. Mound the red pepper neatly in the center of the spinach. Drizzle with the desired amount of Balsamic Vinaigrette.
