CHEESECAKE

Ingredients

  • 1 1/4 c graham cracker crumbs
  • 1/4 c melted butter
  • 1/2 c sugar
  • Bake 350, 10-12. Remove and cool
  • 20 oz cream cheese
  • 3 eggs
  • 1 c sugar
  • juice of 1 lemon
  • 7 T heavy cream

Preparation

Step 1

Have all ingredients at room temperature. Mix cream cheese, add cream, mix, add lemon juice. Mix until smooth. Pour into crust. Bake 350, 45 min. Turn off oven and let cake remain 30 minutes. DO NOT OPEN OVEN. Cool 30 minutes.
First topping: 1 pt sour cream, ½ c sugar, 1 tsp vanilla
Blend ingredients and pour over cake. 450, 10-12 minutes. Cool
Strawberry topping: fresh strawberries, ½ c water, ¾ c light corn syrup, 2 T cornstarch, 2 T water, red food coloring, ¼ tsp almond extract
Heat water and syrup to boiling. Mix cornstarch and 2 T water. Add to syrup and water, cook until thick. Add coloring and flavoring. Slice berries on cake. Spoon on glaze. Cake is much better after a few days.
