Ingredients

  • 1 boneless beef chuck roast (3-4lbs)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp olive oil
  • 3 cloves garlic
  • 1 cup red wine or beef broth
  • 1 can beef broth
  • 1/2 cup balsamic vinegar
  • 1 bunch thyme sprigs
  • 4 sage leaves
  • 2 bay leaves
  • 1/2 c cornstarch
  • 1/2 c cold water

Preparation

Step 1

Sprinkle roast w salt & pepper. In a Dutch oven heat oil brown roast on all sides. Remove from pan. Add veggies, cook until tender, add garlic,cook 1 min, add wine, broth, vinegar, add roast, bring to boil . Cover and bake 325 for 21/2-3 hrs.
