Ingredients
- 2 egg whites
- 1 cup sugar
- 1/4 tsp almond extract
- 2 1/2 cups ground almonds

Step 1
1. Preheat oven to 300 degrees and line a baking sheet with parchment paper.
2. In a large mixing bowl, beat egg whites until stiff peaks form. Beat in sugar, 3 tablespoons at a time, until stiff peaks form. Beat in almond extract and then fold in the almonds.
3. Drop by generous Tablespoon, or pipe from a bag, 2 inches apart, on the cookie sheet.
4. Bake for 20 minutes or until firm to the touch and golden.
5. Cool on wire rack.
