Ingredients
- 7 lb. cucumber
- 2 c. slated lime
- 2 qt. vinegar
- 1 pt. water
- 2 tsp. minced pickling spices
- 2 tsp. whole cloves
- 2 tsp. celery seed
- 3 tbsp. salt
- 4 1/2 lb. sugar (9 c.)
- green coloring
Preparation
Step 1
Soak 7 lbs. cucumbers (sliced 1/4 inch thick-unpeeled) in a solution of 2 c. slated lime mixed with 2 qts. water and soak 24 hours. Wash well. Cover with cold water and let stand 3 hours. drain. Cover with boiling syrup: 2 qt. vinegar, 1 pt. water, 2 tsp. minced pickling spices, 2 tsp. whole cloves, 2 tsp. celery seed, 3 tbsp. salt, 4 1/2 lb. sugar (9 c.), green coloring. Let stand in syrup overnite. Then bring cucumber to boil and simmer in the refrigerator 35 minutes. Put in jars and seal. Encumber should not boil (only simmer).
