Spanakopita

  • 1 pkg. phyllo pastry
  • 1 10 oz. pkg. frozen chopped spinach, thawed
  • 2/3 cup feta cheese
  • 1 beaten egg
  • 1 medium onion, minced
  • 2 tbsp. olive oil

Preparation

Step 1

Saute the onion in olive oil until transparent. Squeeze all the moisture out of the spinach and put in a medium mixing bowl. Add the onion and cheese and mix well. Add the beaten egg and toss to coat.

Place two leaves of phyllo pastry on board; brush with melted butter. Cut crosswise into 7 strips. Place 1 teaspoon of filling at end of a strip. Fold over one corner to opposite side, making a triangle. Continue folding, keeping triangle shape, to other end of strip. Repeat with remaining strips. Arrange on cookie sheets. Repeat with other pastry leaves.

Bake at 400 degrees for about 20 minutes until golden brown.
