Spiced Apple Brandy Liqueur

Ingredients

  • 8 medium tart apples,cured and quartered
  • 4 cinnamon sticks
  • 2 teaspoons whole cloves
  • 2 teaspoons whole allspice
  • 4 cups dry white jug wine
  • 4 cups sugar
  • 4 cups brandy
  • 1/2 teaspoon grated lemon rind

Preparation

Step 1

1. In a medium saucepan,combine apples,spices, and 1/2 cup white wine. Place over medium heat and bring to a simmer. Cook loosely covered,for about 7 minutes,or until the apples begin to soften. Stir in the sugar and cook,stirring until the sugar has dissolved.

2.Combine the apple mixture,the remaining wine,and the brandy in a large glass container. Cover tightly and store in a cool dark place,shaking the container every 2 or 3 days,for 4 weeks/

3. Strain the liquid through a double thickness of cheesecloth and repeat until the liquid is clear. Reserve the "drunken"apples for another use. Pour the liqueur into two 1quart or four 1pint decanters or bottles,cover tightly, and store in a cool,dark place for 1 to 2 weeks before using.

Use pretty bottles or decanters,available at kitchenware shops,and tie red velvet ribbon around the collar of each bottle. Tie a few silvery jingle bells into each bow.
