Ingredients

  • 1 lb link andoiuille or smoked sausage
  • 1 medium onion chopped
  • 1 15 oz can cut up tomatoes
  • 1 15 oz can pinto beans
  • 1 15 oz can garbanzo beans
  • 1 15 oz can white or great northern beans
  • 1 quart chicken broth
  • 2 cloves finely chopped garlic
  • 1 stalk celery diced optional
  • 1 large carrot diced optional
  • 1 cup fresh or frozen corn
  • 1/4 tsp cayenne pepper, or to taste, optional(if not using andouille sausage)

Preparation

Step 1

cut sausage into half-inch dice and place in heavy 5 qt dutch oven
cook on medium/low heat 2-3 minutes until it begins to release juices and fats
add onion and continue cooking 2-3 minutes until onions begin to soften
stir in tomatoes, beans, chicken broth, garlic, celery, and carrot
bring just to a boil and immediately reduce heat to low
simmer about 12-15 minutes
stir in corn and cayenne
continue cooking about 2 more minutes or turn to very low simmer and keep warm 30 min until serving
