Ingredients

  • 1/2 Cup Vegetable Oil
  • 3 Eggs
  • 1 Cup Sugar
  • 1 Tablespoon Anise Extract
  • 3 1/4 Cups All Purpose Flour
  • 1 Tablespoon Baking Powder
  • 1/4 Cup Finely Chopped Almonds
  • Chocolate Squares (Optional)

Step 1

Preheat oven to 375. Grease cookie sheets or line with parchment paper.
In medium bowl, beat oil, eggs, sugar and anise flavoring until well blended. Combine flour, baking powder and almonds. Stir into egg mixture to form a heavy dough. Divide dough in two pieces. Form each piece and roll into a log as long as your cookie sheet. Place on your cookie sheet and press down to 1/2 inch in thickness.

Bake for 25-30 minutes until golden and remove from baking sheet and place on wire rack to cool. When cool enough to handle, slice each one on a diagonal 1/2 inch thick. Place the slices cut side up back on the baking sheet and bake for an additional 6-10 minutes on each side Cookies should be lightly toasted.

If desired, melt dark chocolate squares and dip tips of cookies when cooled.
