  • 1/2 cup Country Crock spread, divided
  • 2 cups onions, chopped
  • 3/4 cup panko bread crumbs
  • 8 cups mixed vegetables (broccoli and cauliflower florets, red pepper and green beans) cooked
  • 2 cups Cheddar cheese, shredded and divided

Step 1

Preheat oven to 375 deg. Melt 1/4 cup Country Crock spread over med-high heat in large skillet. Cook onions about 8 minutes, stirring occasionally. Add bread crumbs; cook for 2 minutes, stirring until lightly toasted. Transfer mixture to bowl. Melt remaining spread in skillet; add vegetables and toss. Arrange 4 cups of vegetables into shallow 2 qt baking dish. Sprinkle with 1 cup cheese and half of the crumb mixture. Layer on remaining vegetables and cheese; top with crumb mixture. Bake 25 to 30 minutes, or until heated through and cheese is melted.
