Ingredients

  • 2-1/2 cups cooked rice
  • 1-1/2 cups evaporated milk
  • 2/3 to 1 cup brown or white sugar
  • 3 tablespoons soft butter or margarine
  • 2 teaspoons vanilla
  • 1/2 to 1 teaspoon cinnamon or nutmeg
  • 3 eggs, beaten
  • 1/2 to 1 cup raisins

Step 1

Lightly grease crockpot with butter or margarine. Combine rice with all remaining ingredients. Pour into greased crockpot. Cover and cook on HIGH, 1 to 2 hours, or LOW, 4 to 6 hours. (Pudding will be moister if cooked at lower time range.) Stir during first 30 minutes. Cook to desired texture. Recipe can be doubled.
