Truffled Mushroom Crostini

Ingredients

  • 1 baguette, sliced 1/2" thick
  • 1 clove garlic, peeled and smashed with back of knife
  • 1/2 cup fresh shiitake mushrooms or crimini, thinly sliced
  • 1/4 cup shallots, minced (from 2 medium shallots)
  • 1 tbsp. butter
  • 2 teaspoons extra-virgin olive oil
  • 1/4 cup white truffle oil
  • 1/2 cup crème fraîche
  • 2 tablespoons fresh chives, minced
  • Salt and pepper to taste

Preparation

Step 1

Preheat oven to 375 degrees.

Slice bread diagonally, slices 1/2" thick. Brush with truffle oil and rub with garlic. Bake the crostini slices in the oven for 12-15 minutes or until golden brown.

While the bread is baking, heat olive oil and butter in skillet. Saute mushrooms for 1 minute. Add shallots and saute for 2 minutes. Season with pepper and salt.

Spoon mushrooms over the slices. Mix truffle oil with creme fraiche. Drizzle mushrooms with creme fraiche. Mince the chives. Sprinkle chives over the mushrooms.
