Ingredients
- Crepe:
- Use 6 egg yolks
- Use 6 to 8 eggs
- Beat in mixing bowl with mixer
- Add
- 1/4 cup sugar
- 1-teaspoon salt
- 3-cups flour
- 6-cups milk
- Cheese filling:
- 3 lbs cheese (farmers)
- 3/4 to 1-cup sugar
- 3 tablespoons cinnamon
- 6 –8 eggs
- Mixture has to be moist
- Adjust to taste
Preparation
Step 1
Gradually beat in 1 cup of flour (3 cups total).
After 1st cup of flour is beat in, add 2- cup milk, beat till smooth.
Add another cup of flour and beat in. Add 2-cups milk, beat till smooth.
Add final cup of flour and beat in.
Add 2 cups of milk beat till smooth. (Total 6 cups of milk)
Add Salt & the sugar.
Taste batter, It should be a little sweet.
Let stand 20-30 min.
Might have to add more flour/milk
Use salt pork to rub the pan to make crepes.
Use a ladle to spoon mix into metal frying pan.If crepe rip’s while trying to flip it, add more flour to batter.
If crepe is thick, add more milk to batter
Occasionally stir batter so the flour will not settle on the bottom of bowl.
Cheese filling:
Mix Cheese eggs, cinnamon and sugar together
Mixture has to be moist
Adjust to taste
Fill crepes by spooning mixture onto them and fold them up.
Heat them in a frying pan with butter. . Absolutely Delicious.
