  • Zucchini Bread
  • 4 Cups shredded Zucchini (squeeze off excess liquid)
  • 3 Cups flour
  • 2 1/2 Cups sugar
  • 1 1/4 Cup oil
  • 4 eggs beaten
  • 1 Tbls. + 1 tea.vanilla
  • 1 Tbls. Cinnamon
  • 1 1/2 tea salt
  • 1 1/2 tea baking soda
  • 1/2 tea baking powder
  • 1 Cup nuts and or raisins

Step 1

Lightly oil 2 bread pans; sift dry ingredients; blend all ingredients on low speed 1 minute; pour in pans; bake 50 to 90 minutes @ 325, (usually 60 minutes for 2 large loafs)
