Ingredients
- Zucchini Bread
- 4 Cups shredded Zucchini (squeeze off excess liquid)
- 3 Cups flour
- 2 1/2 Cups sugar
- 1 1/4 Cup oil
- 4 eggs beaten
- 1 Tbls. + 1 tea.vanilla
- 1 Tbls. Cinnamon
- 1 1/2 tea salt
- 1 1/2 tea baking soda
- 1/2 tea baking powder
- 1 Cup nuts and or raisins

Step 1
Lightly oil 2 bread pans; sift dry ingredients; blend all ingredients on low speed 1 minute; pour in pans; bake 50 to 90 minutes @ 325, (usually 60 minutes for 2 large loafs)
