Ingredients
- 4 lb. red potatoes
- 8 oz. cream cheese, softened
- 1 c. half & half
- 1 stick butter, softened
- 1 tsp. onion salt
- 1 tsp. garlic powder
- 1 tsp. salt
- 1 tsp. pepper
- 1/4-1/2 cup Parmesan cheese
Preparation
Step 1
Cook potatoes until tender, with skins. Drain, mash and set aside. Beat cream cheese with half & half. Add butter,seasonings and parmesan cheese. Blend well and mix with potatoes (using mixer). Place potatoes into a 9x13-inch pan. Refrigerate overnight (or for several hours). Bring to room temperature and bake at 350 degrees for 30 minutes.
Can also freeze ahead of time.
Variation: Add 1 pkg boursin cheese and 1/2 cup parmesan cheese instead of seasonings.
