Rhubarb Crunch Dessert

  • 1 cup flour
  • 3/4 cup oatmeal
  • 1 cup brown sugar
  • 1/2 cup melted oleo
  • 1 tsp. cinnamon



Step 1

Mix all together and press into 9 x 13 greased cake pan. Save about 1/4 of the crumb mixture for the topping. cover crumb crust with 4 cups of finely cut rhubarb.

Combine: 1 cup water, 2 T. cornstarch, 1 tsp. vanilla and 1 cup sugar. Cook until thick and clear and pour over the layer of rhubarb. Top with remaining crumbs. Bake @ 350 oven for 1 hour. Serve with ice cream or whipped cream.
