Mashed Candied Sweets

This is easy to make, and everyone loves marshmallows on top.

    sweet potatoes (about 8 oz each), peeled

  • ¾

    cup fresh orange juice (from 1 or 2 oranges)

  • ½

    cup pure maple syrup

  • 3

    tbsp unsalted butter

  • tsp ground ginger

  • Salt, to taste

  • Miniature marshmallows, optional


Cut potatoes into 1-inch pieces; cook in boiling salted water until very tender, about 15 minutes. Drain well and remove to a large bowl. While potatoes are hot, mash with remaining ingredients (except marshmallows). To serve, spoon the potatoes into an oven-to-table dish and dot with marshmallows, if desired. Reheat in a 350 F oven until warmed through, about 15 to 20 minutes.
