Maple Bacon Turkey Ravioli

Ingredients

  • 10 * 10 strips uncooked bacon
  • 2/3 * 2/3 cup dark maple syrup
  • 1/3 * 1/3 cup bourbon
  • 1/3 * 1/3 cup chopped pecans
  • 1 * 1 cup shredded turkey
  • 1 * 1 cup Gruyere cheese
  • * Wonton wrappers
  • 1/4 * 1/4 cup heavy cream
  • 1/4 * 1/4 cup water
  • 2 * 2 tsp garlic
  • 2 * 2 pinches salt
  • * Cracked black pepper to taste

Preparation

Step 1

Reduction: Fry bacon in a pan until crisp. Remove from pan, leaving drippings. Add bourbon, maple syrup, water, salt, black pepper and garlic. Assembly: Toast pecans in a small saute pan then combine with 1/2 cup of bacon reduction and turkey. Place 1 1/2 teaspoons of turkey mixture and 1 1/2 teaspoons Gruyere cheese on a wonton wrapper. Wet perimeter of wonton wrapper with warm water and fold wrapper over in half. Seal and crimp edges with a fork. Cooking: Drop ravioli into boiling water for 4 minutes, ravioli will float. Take remaining bacon reduction and combine in a saucepan with heavy cream and heat through for 4 minutes on medium high heat. Occasionally stir sauce as it heats. When ravioli is fully cooked, plate and drizzle cream sauce over top to complete dish. Optional: garnish with toasted chopped pecans and fresh chopped Italian parsley.



Notes: Wonton wrappers are a delicious and simple way to make ravioli. You can find them at any Asian food market. Wetting the perimeter of the wonton wrapper with warm water acts as an adhesive to glue both sides together.
