Ingredients

  • 1 cup minced canned clams.
  • 1/2 lb. salt pork or bacon
  • 1 cup chopped onions
  • 2 cups diced potatoes
  • 1/2 cup sliced celery
  • 2 tablespoons flour
  • 1 cup milk
  • 1 cup light cream or half and half
  • 2 tablespoons butter
  • 1/2 teaspoon dried thyme
  • 1 bay leaf

Preparation

Step 1

1. Cut salt pork or bacon in small pieces, dry out. Remove crackling and pour off half the fat.
2. Lightly brown the onions in the remaining fat; add chopped clams. Cook about 5 min. Sprinkle with flour, gently add the warm clam liquid, and blend to creamy consistency. Put in potatoes, celery and salt and pepper to taste. Cover and simmer until potatoes are tender.
3. Add butter and when melted, the bits of salt pork or bacon, the milk and cream. Heat well, but do not boil.
4. serve with toasted crackers.
