Lime Sherbet Freeze

Ingredients

  • 1 1/2 c. crushed Ritz crackers
  • 4 tbsp. sugar
  • 4 tbsp. oleo, melted
  • 1 qt. softened vanilla ice cream
  • 1 qt. softened lime sherbet
  • 4 tbsp. fresh lemon juice
  • 1 c. sugar
  • 6 tbsp. oleo
  • 2 eggs, well beaten

Preparation

Step 1

Mix the crackers, sugar and the 4 tablespoon of melted oleo. Press into the bottom of cups or the bottom of a 9x13 pan.

Mix the ice cream and sherbet and put over the crumbles. Freeze. Cook over low heat until thick the lemon juice, sugar and the 6 tablespoon oleo and eggs. Spread over the ice cream mixture and freeze.

Keeps a long time.
