Honeydew Peach Salsa (ATK)

Choose a ripe melon--but not an overripe one--for best flavor. This salsa works well with pork and chicken.

Ingredients

  • 1/2 honeydew melon (ripe), peeled, seeded, and cut into 1/4-inch dice (about 2 cups)
  • 1 peach, peeled, pitted, and cut into 1/4-inch dice (about 1 cup)
  • 1/2 small shallot, minced (about 1 tablespoon)
  • 2 tablespoons chopped fresh cilantro leaves
  • 1/4 teaspoon ground coriander
  • 2 - 3 tablespoons lime juice (from 2 limes)
  • Table salt
  • hot pepper sauce, such as Tabasco

Preparation

Step 1

In medium bowl, toss together honeydew, peach, shallot, cilantro, coriander, 2 tablespoons lime juice, and 1/2 teaspoon salt; let stand at room temperature to blend flavors, 15 to 30 minutes. Adjust seasoning with additional lime juice and salt, and add hot sauce to taste; serve.
