FISH CAKES

Nicely browned patties. A good use for leftover fish.

Ingredients

  • 1-1/2 cups cooked, mashed potatoes
  • 1/2 cup shredded or mashed cooked fish
  • 1 large egg
  • 1/4 tsp onion powder
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/4 tsp parsley flakes
  • 1/4 cup fine dry bread crumbs
  • 2 tsp hard margarine

Preparation

Step 1

Mix first 8 ingredients in order given in bowl. Divide into 4 equals portions. Shape each portion into 3/4 inch thick patty.

Melt margarine in frying pan. Add fish cakes. Brown both sides.
