  • 1 pkg unflavored gelatin
  • 1/4 cup cold water
  • 1 tbsp. grated lemon rind
  • 1/2 lemon juice
  • 1 cup sugar
  • 2/3 cup plain yogurt
  • 1 cup whipping cream

Preparation

Step 1

In saucepan, sprinkle gelatin over cold water; let stand for 1 minute to soften. Stir over low heat until gealtin dissolves. Stir in lemon rind, lemon juice and half of lthe sugar. Stir in yogurt.
In a bowl, whip cream with remaining sugar; fold into lemon mixture.
spoon into parfait glasses or serving dish. Cover and refrigerate for 2 hours or up to 1 day. Makes 6 - 8 servings.
