Mango Mania Chicken

Ingredients
- 1 tablespoon olive oil
- 4 (4-oz.) boneless skinless chicken breast halves
- 1 mango, seeded, peeled and cubed
- 1/2 cup mango juice
- 1/4 cup mango chutney
- 2 medium zucchini, thinly sliced lengthwise
- 1/4 cup water
- Salt, to taste
- Crushed red pepper flakes, to taste
Preparation
Step 1
Heat the oil in a large skillet over medium-high heat. Reduce heat to medium and add chicken; cook for 6 minutes; turn. Add mango cubes, mango juice and chutney; cook for 4 to 6 minutes or until chicken is no longer pink in the center, stirring occasionally. Meanwhile, place zucchini and water in a microwave-safe, 2 quart square dish; cover with vented plastic wrap and microwave on HIGH for 2 to 3 minutes, stirring once; drain. Place chicken mixture on top of zucchini; season with salt and crushed red pepper flakes to taste.
SERVING SUGGESTION: Brown rice topped with a dollop of low fat sour cream and chopped green onion; add a big salad tossed with Easy Balsamic Vinaigrette (see recipe).
GLUTEN FREE: Make sure mango juice and mango chutney are gluten free.
