  • 100 g mincemeat
  • 25 g dried cranberries or blueberries - chopped
  • zest of 2 clementines
  • splash of sherry or brandy
  • flour to dust
  • 250 g frozen puff pastry
  • 1 pkg filo pastry
  • 50 g. melted butter
  • 1 egg, beaten
  • 50 g. flaked almonds
  • powdered sugar to dust



Step 1

Preheat the oven to 350. Scoop the mincemeat into a large bowl and mix in the dried berries, clementine zest, and sherry or brandy. Dust a clean worksurface with flour and roll out the puff pastry to 8"x16" and the thickness of a one pound coin. Spread the mincemeat mix leaving a 1/2" gap around the edges. Roll like a swiss roll and put log on a tray and refrigerate.
Butter 2 cupcake trays with the melted butter. Place a sheet of filo over the tray and ease down into the holes and brush with butter. Add subsequent sheet and do the same.
Take roll of pastry out of fridge and with a sharp knife cut into 24 slices. Place one slice into each cupcake hole and brush with egg and sprinkle with almonds. Put trays into oven for 25 minutes. Cool. They can be frozen
