Lemon Meringue Pie

Ingredients

  • 1 1/2 cups sugar
  • 1/3 cup corn starch
  • 1 1/2 cups boiling water
  • 3 egg yolks slightly beaten
  • 1/3 cup lemon juice
  • 3 tbs butter
  • 3 egg whites
  • 1/8 tsp cream of tarter
  • 6 tbs sugar

Preparation

Step 1

Combine sugar and corn starch. Stir in boilin water. Cook on high for 2 minutes. Stir. Cook on high for 2 -2 1/2 minutes until thick and translucent. Gradulally stir in 1/2 cup of the hot mixture into egg yolks. Then stir yolk mixture into hot mixture. Cook on high 45 seconds. Stir in lemov and butter pour into ready made crust.

Beat egg whites until fluffy. Add cream of tarter. Add sugar gradually until meringue forms peaks. Brown in oven.
