Ingredients

  • 4 eggs at room temperature
  • 12 oz semi sweet chocolate chips
  • 2 t vanilla extract
  • pinch of salt
  • 1 C very hot very strong black coffee
  • 1 C heavy cream
  • 2 T sugar

Preparation

Step 1

In a blender crack the eggs in, add the chocolate vanilla and salt. Pulse the blender until the chips are broken up. With the blender running on a medium speed slowly pour in the coffee in a steady stream. Continue to blend until the chocolate is melted and the mix has increased in volume with air.

Pour the mix into serving dishes and chill in the fridge for at least 2 hours but overnight works better.

Just before serving place cream and sugar in a bowl and whip, top pots de creme with whipped cream and serve.
