Twice Baked Potato Casserole
- 6 medium unpeeled potatoes, baked
- salt & pepper to taste
- 1 lb. bacon, cooked & crumbled
- 24 oz. sour cream
- 8 oz. shredded mozzarella cheese
- 8 oz. shredded cheddar cheese
- 2 green onions, chopped
Cooking time 120mins
Cut potatoes in 1 inch cubes. Place half in greased 13x9 casserole dish. Season with salt & pepper and half the bacon. Top with half the sor cream, half the mozzarella, half the cheddar and half the green onions.
Bake uncovered, at 350 for 20 minutes or until cheeses are melted.
