These delicious honey date cookies are so delicious! A great and healthy cookie to make as a special treat or even to pack in lunches every day!
- HONEY DATE FILLING:
- 6 ounces pitted dates
- 6 ounces chopped pecans or walnuts
- 1/4 cup sugar
- 1/4 cup honey
- 1 teaspoon grated orange peel
- 1 1/2 tablespoon orange juice
- COOKIE DOUGH:
- 1 cup butter, softened
- 1/2 cup sugar
- 2 1/4 cups flour
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla
- 1 egg
- Powdered sugar, optional
Prepare honey date filling by putting all ingredients in a food processor and pulsing until a smooth consistency.
Heat oven to 375° F. Beat butter and sugar. Stir in remaining ingred except powdered sugar.
Place dough in cookie press with ribbon tip. Form 10-inch ribbons about 2 inches apart on ungreased cookie sheet.
Spoon filling down center of each ribbon to form 1/2-inch-wide strip. Top with another ribbon of dough and gently press edges with fork to seal.
Bake 12 - 15 minutes or until light brown.
Immediately cut ribbons into 2-inch lengths and move to wire rack. Sprinkle with powdered sugar.
