English Toffee

Use a cast iron skillet, a wooden spoon and AA butter. Have cookie sheet lined with non-stick foil ready. Do not reintroduce the wooden spoon ever after taking it out, use a new wooden spoon.

Ingredients
- 2 cubes butter (must be AA grade. Lesser grades of butter have water in them and the
- candy will separate.)
- 1 cup sugar
- 5 T. water
- 1 t. vanilla
- 2-3 cups of chocolate chips
- 1 1/2 to 2 cups roasted salted almonds, chopped
Preparation
Step 1
Put the butter, sugar and water in a cast iron skillet and turn the heat to med/high on the hottest burner. Don’t turn it down. Stir the whole time with a wooden spoon that you never take out. It takes about 10 – 15 minutes to make. Cook it until the color turns caramel. You can see little puffs of smoke coming from the caramel-colored bubbles. Take it off the heat and add the vanilla.
Have pan or cookie sheet lined with non-stick foil ready and set on top of a cutting board. Pour hot candy immediately into pan and sprinkle chocolate chips evenly over molten candy. When chocolate starts to melt, spread it and then top with chopped nuts. Let candy cool and chocolate set up, then break apart and store.
