Ingredients
- 1 egg yolk
- 1 T Dijon mustard
- 1 T red wine vinegar (or lemon juice)
- 1 tsp crushed garlic
- 1 tsp crushed anchovy
- 1/2 cup olive oil
- salt and pepper

Preparation
Step 1
1. Place yolk in a stainless steel bowl.
2. Place bowl over a pot of simmering water and whisk yolk until warm and frothy.
3. Add mustard, vinegar, garlic and anchovy - stir.
4. Gradually whisk in olive oil.
5. Season.
