Ingredients

  • Icing for cookies:
  • 1 c. sugar
  • 1 c. shortening
  • 1 c. carrots, sliced, cooked and mashed. 2 c. flour
  • 1/4 t. salt
  • 2 t. baking powder
  • 1 t. lemon juice
  • 1 1/2 c. powdered sugar
  • 1/2 c. orange juice
  • 1 egg
  • 3 T. grated orange peel

Preparation

Step 1

Cookies:

Cream shortening and sugar. Add beaten egg and mashed carrots.
Sift flour, baking powder and salt. Add to creamed mixture and mix thoroughly.

Drop by spoonful's onto cookie sheet and bake for 10 minutes @ 350 degrees.

Icing:
Mix together powdered sugar, orange peel, and juice. Frost cooled cookies.

Grandma Hutchison always used strained baby carrots in place of the cooked carrots.,
