Five Minute Shakshuka

Ingredients

  • 1/2 cup salsa
  • 1 cup tomato sauce or marinara sauce
  • 1 tsp oil
  • 2-3 eggs
  • 1-2 Tbs freshly chopped parsley
  • black pepper and salt ,for sprinkling

Preparation

Step 1

Combine salsa and tomato sauce in a bowl. Place oil in a small skillet or pan and preheat over medium heat. Pour the sauce into it. Let cook for 2-3 min.
Meanwhile,crack 2 eggs into 2 diff. bowls. Make a small hole int the tomato sauce with the back of a spoon and pour in one egg. repeat with the second egg and a third if desired. Cover the pan with a pot lid larger than the pan circumference and cook just until whites are firm and yolks are set. Uncover,sprinkle with fresh parsley,and serve with baguettes or crusty bread.
