Velvet Crumb Cake

Ingredients

  • Cake:
  • 1 1/2 cups Bisquick baking mix
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup milk or water
  • 2 tablespoons shortening
  • 1 teaspoon vanilla
  • Topping:
  • 1/2 cup flaked coconut
  • 1/3 cup packed brown sugar
  • 1/4 cup chopped nuts
  • 3 tablespoons margarine or butter, softened
  • 2 tablespoons milk

Preparation

Step 1

Preheat oven to 350F.

Grease and flour an 8-inch square or 9-inch round pan. Beat all ingredients together on low speed, scraping bowl constantly for 30 seconds. Beat on medium speed, scraping bowl occasionally for 4 minutes. Pour into pan.

Bake until wooden pick inserted in center comes out clean, 30 to 35 minutes. Cool slightly.

For topping, combine all ingredients. Spread topping over cake.

Set oven to broil and place cake 3 inches from heat until golden brown, about 3 minutes.
