Stuffed Zucchini

  • 2 Large or 4 Medium squash
  • 1 1/2 cups chili, 1 1/2 cups cooked rice, & pepper jack cheese
  • or
  • 2 cups chicken salad & cheddar cheese
  • or
  • 6 eggs, scrambled, crumbled bacon, 2 tbs. dry breadcrumbs & Parmesan cheese



Step 1

Halve the zucchini & scoop out pulp, leaving 1/2" thick shell. Gently boil shells for 5 minutes or until crisp tender. Drain upside down on paper towels. Chop zucchini pulp, squeeze dry in a clean dish towel & stir pulp into one of the main-dish stuffings. Place empty shells in a baking dish, fill with stuffing mixture, add appropriate toppings & bake at 350 for 20-25 minutes until hot. Serves 4
