Beef, Bean and Barley Stew

Ingredients

  • 1 lb stew meat
  • 1 small onion, chopped
  • salt and pepper
  • 1 can (14oz) beef broth
  • 3 1/2 C water
  • 1 can diced tomatos with juice
  • 4 potatos, cubed
  • 1/2 head cabbage, shredded
  • 1/3 C quick cooking barley
  • 1 can (14.5oz) great northern beans, rinsed and drained
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 1/4 tsp rosemary
  • 1/4 tsp caraway seeds

Preparation

Step 1

Coat large pot with cooking spray. Place over medium heat and cook beef until brown.

Stir in onion and cook until translucent. Drain fat

Stir in salt and pepper and cook 1 minutes. Pour in beef broth, water and tomatoes. Stir in potatoes, carrots, cabbage, barley and beans. Add seasonings. Bring to a boil, reduce heat and simmer for 20 minutes or longer.
