Bruschetta

An excellent appetizer or accompaniment with Chicken Caesar salad (separate recipe)

Ingredients

  • 1 1 1 Loaf good artisan bread, garlic, whole grain, Italian loaf, rosemary
  • 5 5 5 -6 roma tomatoes
  • 1/4 1/4 1/4 cup EVOO - Extra Virgin Olive Oil
  • 2 2 2 Tbsp Balsamic vinegar
  • 1 1 1 Tbsp dired basil
  • 8 8 8 oz. shredded Romano cheese
  • to cracked pepper to taste

Preparation

Step 1

Dice tomatoes into a 1/4" chop, add to a mixing bowl, add in the EVOO, basil, and 1 tsp fresh pepper. Stir and let marinade while you slice bread into 1/2 or so thick slices.
Preheat broiler - layout bread on a cookie sheet and broil until just lightly toasted, flip and repeat.
Add in the balsamic vinegar to the tomatoe mixture and stir well.
Using a slotted spoon, evenly cover the bread with the tomato mixture, cover liberally with Romano cheese and return to the broiler for a couple minutes or until the cheese melts. Bon appetit!
