  • 2 1/2 lb beef chuck roast, cut into 3/4 inch cubes
  • 1/2 c onion
  • 4 cloves garlic
  • 2- 10 1/2 cans diced tomatoes
  • 1 - can CONDENSED beef broth
  • 1 can enchilada sauce
  • 2 cans pinto and kidney

Brown beef. Stir in rest and simmer until beef tender (recipe said 30 minutes but that sounds too short)
