Ingredients

  • 4 Cup flour
  • 2 1/2 cup sugar
  • 4 tsp. baking soda
  • 4 tsp. cinnamon
  • 1 tsp salt
  • 4 cup peeled, grated apples
  • 1 cup raisins
  • 1 cup chopped nuts
  • 1 cup shredded coconut
  • 1 cup grated carrots
  • 6 eggs
  • 2 cup vegetable oil
  • 4 tsp vanilla

Preparation

Step 1

Sift flour, sugar, baking soda, cinnamon and salt. Stir in apples, raisins, nuts, coconut and carrots; mix well. Beat eggs with oil and vanilla. Stir into flour mixture until just combined. Spoon into greased or paper-lined muffin tins. Bake at 350 for 35 minutes (toothpick test - may be done 28-30 minutes). Yield 3 dozen regular muffins. These freeze well.
