Becky Friedman’s Passover Muffins

Ingredients

  • 1 box Matzo Farfel
  • 3 or 4 large onions
  • 8 medium or 6 large eggs
  • 2 tsp sugar
  • 2 tsp salt

Preparation

Step 1

Preheat oven to 350 degrees
Cover Matzo Farfel with hot water to soften then drain well
Dice and sauté onions
Beat eggs
Mix all ingredients together
Divide into 18 portions
Place each portion into a cup in a muffin tin
Bake for 60 minutes
