Vera's Chocolate Cream Pie

George's "mom", Vera Gray's chocolate pie is reknowned! It is simply the best chocolate pie ever! I try to make it like she does...but she just has the touch. She has to make chocolate pie for every occasion, or everyone complains!!
Ingredients
- Pie Crust
- 2 1/2 cups plain flour
- 1 cup Crisco
- 1 tsp salt
- 1 tsp vinegar
- 1 egg
- 5 TBSP cold water
- Filling
- 1 Cup sugar
- 3 TBSP flour
- 3 TBSP cocoa
- 2 Cups milk
- 1 tsp butter
- 3 egg yolks beaten
- 1 tsp vanilla
- Meringue recipe
Preparation
Step 1
Crust: Never Fail Pie Crust
Put egg, water and vinegar in a small bowl and beat slightly; set aside.
Keep mixture cold.
Mix flour and salt in large bowl then cut in Crisco with a fork.
Add egg, water and vinegar mixture.
Roll out and put in pie plate.
Makes two crusts
If you are making a pie with a prebaked crust...bake at 425 degrees for 11 minutes
Filling:
Stir together sugar, flour and cocoa....moisten with a little bit of milk to a paste consistency.
On medium heat, warm 2 cups of milk
Put dry mixture into warmed milk and stir until smooth and starts to thicken then add butter
To the beaten egg whites, slowly add about half of the warmed mixture and stir, then add the egg mixture to the rest of the chocolate mixture on the stove. Cook until thick
Add 1 tsp vanilla and continue to cook till thick again
Pour into crust while filling is still hot
Pile with meringue and brown the meringue.
