Ingredients

  • 5 oz farfelle
  • 2 50z cans tuna in water (albacore)
  • 3 t olive oil
  • 2 tsp lemon zest
  • 1/4 clemon juice
  • 1 tsp minced garlic
  • 1/2 tsp dijon
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 150 z can canelli beans, rinsed and drained
  • 1 c grape tomatos halved
  • 2 c arugula
  • 1/2 red onion thinly sliced
  • 4 t grated parm

Step 1

1)cook pasta, drain, rinse under cold water and drain again

2)drain tuna and transfer to bowl. break into chunks and drizzle with 1t oil, toss

3)in bowl, whisk together zest, juice, remaining oil, garlic, mustard, sugar salt and pepper

4) add pasta, beans, tomato, arugula and onion to bowl. add tuna and toss gently. top with parm
