Twenty-Minute Pasta Salad

Easy peasy!

Ingredients

  • 2 cups uncooked pasta of various shapes (rotini, elbow, shells)
  • 1 1/2 cups sliced carrots
  • 2 1/2 cups broccoli florets
  • 1/2 large red bell pepper, diced
  • 1/4 cup minced red onion
  • half of a 7oz can whole-kernel corn, drained
  • 2 Tbsp virgin olive oil
  • 1 tsp red wine vinegar
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • salt and pepper to taste

Preparation

Step 1

1. Prepare the pasta to package directions; drain.

2. Meanwhile, steam the carrots and broccoli just until tender, about 4-5 mins. Place veggies in a alrge bowl along with the bell pepper, onion and corn.

3. Add the remaining ingredients and mix well. Add the pasta to the bowl and toss lightly.
