CHOCOLATE CARAMEL PIE

  • Crust: 1 pie crust, 2 oz semisweet chocolate, 1 T margarine. Prepare pie crust; spread with melted chocolate and margarine. Refrigerate

Step 1

Caramel layer: 20 caramels, 1/3 c whipping cream, 1 ½ c peanuts. Melt caramels and whipping cream over low heat; add peanuts. Spoon into chocolate-lined crust.
Mousse layer: 8 oz semisweet chocolate, 2 T margarine, 1 c whipping cream, 2 tsp vanilla. Melt chocolate and margarine; cool. Combine 1 c whipping cream and vanilla; beat to soft peaks. Fold in chocolate. Spread in pan. Refrigerate. Optional: garnish whipped cream on pie.
