Oatmeal, Raisin & Nut Cookies

Ingredients

  • 1/2 cup chopped raisins
  • 1/2 cup orange juice
  • 1 cup butter at room temperature
  • 3/4 cup sugar
  • 1 egg yolk, lightly beaten
  • 2 tsp vanilla extract
  • 2 cup flour
  • Pinch of salt
  • 1/2 cup old fashioned rolled oats
  • 1/2 cup chopped hazelnuts
  • 30 whole hazelnuts

Preparation

Step 1

1. Preheat oven to 375 degrees F.
2. Line 2 baking sheets with parchment paper.
3. Put raisins in bowl. Add orange juice & soak 10 minutes until plumb
4. Put butter & sugar in large bowl. Mix well & then beat in egg yolk & vanilla.
5. Sift flour & salt into butter mixture. Add oats & chopped hazelnuts.
6. Drain raisins & discard any remaining orange juice. Add raisins to butter mixture & thoroughly combine.
7. Drop spoonfuls of dough onto baking sheets, space well apart. Flatten slightly & place 1 whole hazelnut in center of each cookie.
8. Bake 12-15 minutes or until golden brown.
9. Cool & then carefully transfer cookies to racks to cool completely.
